Regulars head straight for the steamed prawn dumplings and siu mai—wrapped thin and packed tight with fresh seafood. Tables turn fast, but nobody rushes past the dinner tanks holding live lobster and crab ready for the wok. Evening banquets lean into fried mee hoon with distinct wok hei and rich salted egg yolk prawns, finished off with complimentary Cantonese daily soup and warm red bean tong sui.
